King Arthur Peanut butter cake

Ingredients
- 1 cup (270g) peanut butter, creamy preferred*
- 8 tablespoons (113g) unsalted butter, softened
- 2 cups (426g) light brown sugar or dark brown sugar, packed
- 1 tablespoon King Arthur Pure Vanilla Extract
- 1 tablespoon baking powder
- 1/2 teaspoon table salt
- 5 large eggs, at room temperature
- 2 cups (240g) King Arthur Unbleached All-Purpose Flour
- 1 cup (227g) milk, at room temperature
*If you use all-natural peanut butter, grind your own, or use low-fat or low-salt peanut butter, the cake won't turn out as described.
Instructions
Preheat the oven to 350°F. Choose your pan(s); this recipe will fit two 9" round cake pans, three 8" round cake pans, or a 9" x 13" pan. Grease the pan(s) or line with parchment.
In the bowl of a stand mixer fitted with the flat beater attachment or working in a large bowl with a handheld electric mixer, combine the peanut butter, butter, and brown sugar. Mix until smooth. Scrape down the sides of the bowl and add the vanilla, baking powder, and salt. Beat in 2 of the eggs, then about 1/4 cup (30g) of the flour (this will keep the batter from curdling).
Beat in the 3 remaining eggs one at a time. Scrape the bowl again and add 1/3 of the remaining flour to the batter, beating gently to combine. Gently beat in half the milk. Mix in half of the remaining flour, then the remaining milk. Stir in the remaining flour. Scrape the bowl once more, and beat for another 30 seconds.
Divide the batter between the prepared pan(s) and level the top. (The total weight of the batter is about 1530g, if you’re weighing the batter evenly into your pans.)
Bake the peanut butter cake(s) for 33 to 35 minutes for 9" layers, 30 to 33 minutes for 8" layers, or 45 minutes for a 9" x 13" cake, until the top springs back when lightly pressed in the center and the edges just begin to pull away from the sides of the pan.
Remove the peanut butter cake(s) from the oven and cool in the pans on a rack for 20 minutes. Then turn the cakes out of the pans and return them to the rack to cool completely before frosting.
Storage information: After cooling, peanut butter cake layers can be wrapped and frozen for up to 2 months; once frosted, the peanut butter cake can be kept at room temperature for several days; freeze for longer storage.

Preheat oven to 350°. Toss oats, pistachios, walnuts, sunflower seeds, sesame seeds, fennel seeds, salt, and cayenne pepper with egg white, oil, and agave syrup in a medium bowl. Transfer mixture to a rimmed baking sheet and bake, stirring once, until golden, 25–30 minutes. Let cool.Savory granola
banana walnut date cake
ingredients
- 175g softened butter, plus extra for the tin
- 200g self-raising flour
- 1 tsp cinnamon
- 2 large eggs, beaten
- 3 tbsp clear honey
- 2 (about 350g with skins on)overripe bananas
- 100g stoned date
- 50g chopped walnut
For the glaze
- 2 tbsp clear honey
- 25g butter
- 50g walnut half
Method
- STEP 1
Heat oven to 160C/140C fan/gas 3. Butter and line the base of an 18cm Bundt mould or round cake tin with baking parchment. Put the flour, cinnamon, butter, sugar, eggs and honey in a large mixing bowl and beat with a wooden spoon or hand-held electric mixer until light and fluffy.
- STEP 2
Mash the bananas and chop the dates. Stir into the cake mix with the walnuts. Spoon into the prepared tin and smooth the top. Bake for 40-50 mins until firm to the touch and a skewer inserted into the centre comes out clean (a round tin may take 10-20 mins more). Cool in the tin for 15 mins, then turn out and cool on a wire rack.
Turkey Broccoli soup
Ingredients
- 2 lb broccoli
- 2 Tbsp olive oil
- 2 cloves garlic, finely chopped
- 1 onion, finely chopped
- 4 cups low-sodium chicken broth
- 3 cups baby spinach
- ½ cup finely grated Parmesan cheese
- 1 Tbsp lemon zest
- 3 Tbsp lemon juice
- 2 cups shredded leftover cooked turkey or chicken
Instructions
- Cut tops of broccoli into small florets and thinly slice stems.
- Heat oil in large pot on medium, then add garlic and onion. Cook until sizzling, about 2 min. Add broccoli stems, season with ½ tsp each salt and pepper, cover and cook 3 min.
- Add florets and ½ cup water, cover immediately and steam until bright green, 3 to 6 min. Transfer half of florets to bowl and set aside.
- Add broth and spinach and simmer 10 min. Add Parmesan, and lemon zest and juice then puree with immersion blender or standard blender. Stir in turkey and reserved broccoli florets.

8 oz feta cheese
1/4 cup cottage cheese or ricotta
1/2 cup packed basil leaves
2 tbsp lemon juice
1 clove garlic
1 -2 tbsp olive oil

Slice Zucchini in half the long way, score the cut side with knife cuts...season with salt pepper

Whip all the feta ingredients in cuisinart... spread across plate and lay zucchini on top...
